Directions:

  1. Heat extra-virgin olive oil in a non-stick frying pan over medium high heat.
  2. Season chicken breasts with kosher salt and freshly ground pepper according to taste. Cook the chicken in the frying pan, flipping once until soft and tender. It takes around 3-4 minutes per side.
  3. Allow it to cool and then dice them to bite-sized pieces.
  4. In a large salad bowl place a romaine lettuce and top it with the diced chicken, corns, beans, tomatoes, onions and shredded cheeses. Now pour some BBQ sauce and Ranch dressing over the salad and gently toss it to combine all ingredients.
